Dumplings with Matcha green

Pelmeni dumplings are a very popular Russian food, traditionally made using white flour, water, egg and salt with a filling of minced pork, onions, garlic, salt and papper. There are many other similar dumplings found in many cultures.

This time we tried to cook pelmeni using Japanese Matcha green tea to add some refreshing green color and a burst of vitamins.

    1. Sift the flour with salt into a bowl. Add Matcha tea powder or Houjicha funmatsucha.

    2. Add water to the mixture a little at a time, mixing evenly.

    3. Roll the dough into a ball, wrap in plastic wrap and place in the refrigerator for about 30 minutes.

    4. Rollout and cut dough into 3-5 cm pieces.

    5. Roll out the pieces of dough separately.

    6. For the filling: load all the ingredients into a food processor with a meat-cutting blade, and ground them, but not too finely.

    7. Using a teaspoon place the mince onto the middle of the dough sealing tightly.

    8. Dumplings will be ready when they float to the top.

    9. Serve hot, drizzled in butter, soy sause, vinegar or sour cream.
