Delicious cookies made with Japanese matcha tea

Confectioneries made with matcha powdered green tea are very popular in Japan. They are nice looking, tasty and healthy!

If you use 2 coloured types of dough: normal white and green tea, add biscuits or cookies they will turn out different patterns. This time we have tried to make spiral and checkboarded patterns.

This cookie has a light taste and fresh flavor of matcha green tea. It will be tasty not only for kids, but adults as well. Add more powdered tea to make the taste stronger.

After mixing, the raw dough can be stored in the freezer, handy for unexpected visitors.

Matcha cookies from chilled dough

  1. Add sugar to room temperature butter.

  2. Mix the butter and sugar well.

  3. Add one room temperature egg a little at a time and mix well.
    (An egg taken out of the refrigerator will be difficult to mix.)

  4. Sift the flour, divide into 2 parts and add matcha powdered green tea to one part.

  5. In each part add half the portions of butter, sugar and egg mixture to make two types of dough.

  6. Wrapp each type of dough in film wrap and place in the refrigerator for 1 hour.

  7. For the checkered pattern: cut each type of dough into 4 long bars.

  8. Connect the white and green bars to each other and put in the refrigerator for 30 minutes.
    For better adhesion use egg whites.

  9. After cooling, cut into 5 mm thick slices.

  10. For a spiral pattern:
    Sprinkle with flour, roll out each type of dough 5 mm thick.

  11. Put the tea green tea layer dough on the top of the colorless layer leaving the edge of the colorless one longer.

  12. For better adhesion use egg whites.

  13. After rolling cut into slices, put on a baking sheet with parchment paper and bake in a pre-heated oven at 170C.
