Traditional Japanese confectionery Wagashi

In Japan, just before serving tea guests are often served with traditional Japanese confectionery Wagashi.
Japanese sweets are loved by health nuts, because the most important ingredients of all kinds of wagashi are only natural plants: beans (azuki beans, soy beans), grains (rice, wheat), potatoes, sesame seeds, Kanten (agar-agar) and sugar.
Wagashi sweets can be classified according to the method of production and moisture content. Namagashi (wet sweets) – contains 30% or more moisture, Han-namagashi (half-wet sweets) – contains 10%–30% moisture and Higashi (dry sweets) – contains 10% or less moisture.
